I should think something like this would work:

Read_JPEG, filepath('rose.jpg', Subdir=['examples', 'data']), rose
r = reform(rose[0,*,*])
g = reform(rose[1,*,*])
b = reform(rose[2,*,*])
Color_Convert, r, g, b, h, s, v, /RGB_HSV
TV, BytScl(h)
