Dave
You could use the already hole-filled SRTM data at www.kcl.ac.uk/geodata
(Google Earth interface) and srtm.csi.cgiar.org (web interface)
Available as ARC ASCII and Geotiff in 5 degree and 1 degree tiles

I am asking about your purpose in doing this. If science
is your goal, then you have to do something you can defend
in a court of your peers. If aesthetics is your goal, then
you can do wonders in Photoshop.
