My first stop with a new HDF file is to see if I can read
it in my ncdf_browser.

If I can, then I can just read the variables out to the IDL
command line from the browser, or I can use the software
to read the variables programmatically.

If I need something fancier than that, I usually go get
Liam Gumley's HDF tools:

http://www.gumley.com/PIP/Free_Software.html

They almost always work. :-)
