Sigma is the uncertainty on the fit parameters (i.e. polynomial/SVD coefficients). From the documentation:

; SIGMA: The 1-sigma error estimates of the returned parameters,
; SIGMA=SQRT(VARIANCE).

By 'fitting error' do you mean the residuals on the fit? These can be returned using the yfit keyword to these functions.
