For what it's worth, I like Aquamacs Emacs for the Mac:

http://aquamacs.org/

This is a Mac-ified version of Emacs (22.0.50.1 right now). I know
IDLWAVE is installed with this; I'm not sure if I updated to a more
recent version.

As far as learning IDLWAVE is concerned, I found the tutorial:

http://idlwave.org/idlwave.html#TUTORIAL

and this reference card:

http://idlwave.org/idlwave_refcard.pdf

to be very useful. There's more info at http://idlwave.org.
