Interesting development: I found out that the interpolation/smoothing takes place as the .eps is opened with the default OSX viewer 'Preview'. The screenshots above are as opened with Preview.

HOWEVER when using the .eps in my LaTeX file it displays just fine, no interpolation. So now I dont really have a problem, even though it might still be a thing to fix.
